If you're missing chocolate on the Autoimmune Protocol (AIP) diet then this is for you! Quick, simple, seriously delicious and hassle free. This will satisfy those chocolate cravings... just remember it's best eaten as an occasional treat - get making!

AIP Chocolate & raspberry bark


Set time : 2 - 3 hours

Servings : 10 pieces


Ingredients


• 1/2 cup + 1 tbsp carob powder, sifted

• 1/2 cup melted coconut oil

• 1/3 cup pure maple syrup

• 3 tablespoons coconut thread

• 1 1/2 teaspoons cinnamon

• 1/4 teaspoon sea salt

• 1/2 cup freeze dried raspberries (plus more for topping)


Instructions

  1. Sift the carob powder, then whisk all ingredients together in a large bowl until combined well.

  2. Spread onto a lined tray or dish.

  3. Sprinkle with crushed freeze dried raspberries and coconut thread.

  4. Freeze or refrigerate for 2 - 3 hours or until set.

  5. Remove and cut or snap in to pieces.

  6. Store in a sealed container in the fridge or freezer.
