AIP Dairy-free cheesy salmon bake

This deliciously hearty meal is loaded with nutritious vegetables and salmon, making it nutrient dense and super healthy. Easy to make and very filling, the salmon is wonderfully tender and moist in the oven baked this way!

I like to make a large batch of AIP Dairy-Free Cheese Sauce as it freezes so well. Having it on hand will reduce your meal prep time when you come to make this meal again, or you can use it for AIP pasta dishes, check out my other recipes.


AIP Dairy-free cheesy salmon bake


Time : 45 minutes + 20 min Cheese Sauce

Serves : 2 - 3 people


Ingredients

• AIP Dairy Free ‘Cheese’ sauce (time to make 20 minutes) recipe here

• 1 sweet potato or golden kumara

• 1 purple skin kumara

• 1 large leek, white part finely sliced.

• Large salmon fillet

• 1/2 lemon squeezed

• 2 tbsp lemon rind

• 1/2 tsp salt

• 1/2 head broccoli, florets (3cups)

• 2 cups AIP Dairy-Free Cheese Sauce

• Lemon slices

• Nutritional yeast

• Salt to taste

• Fresh herbs, coriander or parsley.


Instructions

  1. Make the AIP Dairy-Free Cheese Sauce. Approx. 20 minutes. Recipe here

  2. Preheat the oven to 200 degrees fan bake.

  3. Cut the kumara and sweet potato into round medallions 1 cm thick, and boil in salted water for 5 minutes. Drain and set aside.

  4. Using a stove top casserole / oven dish saute the leeks in olive oil.

  5. Turn off the heat, and layer the kumera over the leeks in the dish.

  6. Wash and pat dry the salmon fillets.

  7. Cut the salmon into large 4 x 4 cm chunks, then place on top of the kumera.

  8. Sprinkle salmon with lemon juice, rind and salt.

  9. Scatter over the broccoli florets and top with the AIP Diary-Free Cheese Sauce.

  10. Bake at 200 in the middle of the oven for 25 - 30 minutes, or until the salmon is just cooked.

  11. Serve meal with a slice of lemon, fresh herbs, a sprinkle of salt and nutritional yeast.
