AIP Dairy-free mince nachos

These easy AIP Nachos are seriously delicious. They’re made with grain-free tortilla chips and loaded with vegetable based diary-free cheese sauce, vibrant mince, and fresh avocado!

Can you have nachos on the AIP diet - yes! These nachos are damn delicious, dairy free paleo and AIP friendly, they include the best dairy free nacho cheese sauce. Try them with a dollop of guacamole or even a mango, cucumber & red onion salsa - delicious!


I like to make a large batch of AIP Dairy-Free Cheese Sauce as it freezes so well. Having it on hand will reduce your meal prep time when you come to make this meal again, or you can use it for AIP pasta dishes, check out my other recipes.


AIP Dairy-free mince nachos


Time : 45 minutes + 20 min 'Cheese' Sauce

Serves : 2 - 3 people


Ingredients


• 350g lamb or beef mince

• 1 tbsp olive oil

• 2 - 3 garlic cloves, minced

• 2 tbsp fresh or dried thyme

• 1/4 cup red onion, diced

• 1 carrot, finely grated

• 1 courgette, grated

• 1 cup AIP Dairy-free ‘Cheese’ sauce (time to make 20 minutes) recipe here

• salt to season

• avocado, diced

• fresh coriander

• natural coconut yoghurt

• nutritional yeast


AIP Grain-Free Tortilla Chips

• 1/4 cup cassava flour

• 1/4 cup tigernut flour (non-AIP use almond meal if tolerated)

• 2 tbsp nutritional yeast

• 1.5 tbsp garlic powder

• 2 tbsp dried oregano

• 2 tbsp dried thyme

• 1/4 cup olive oil

• 2/3 cup hot water

• salt


Instructions


AIP Grain-Free Tortilla Chips (12 minutes) :

  1. Preheat the oven to 190 degrees fan bake.

  2. Place all the dry ingredients into a large bowl and stir together. Pour in the olive oil and hot water, then mix the dough until well combined.

  3. Split the dough into two. Place one lot of dough between two sheets of baking paper and use a rolling pin to roll until very flat. If you have not rolled the dough flat enough they will be chewy and take longer to cook.

  4. Carefully remove the top layer of baking paper and score lines into the dough so they break into crackers when cooked. Transfer the baking sheet with dough on to a tray.

  5. Repeat with the left over cracker dough, then place both trays into the oven.

  6. Bake for 10 - 12 minutes until golden and crunchy. Gently snap along lines into nachos.

Nacho mix :

  1. In a large pan or wok, heat the olive oil and brown the mince. Breaking it up as it cooks.

  2. Add the garlic, herbs, onion and carrot. When the mince is almost cooked add the courgette.

  3. Once cooked reduce to a low heat and stir through the AIP Cheese Sauce. Season with salt.

  4. To serve, place the mince in a bowl topped with freshly diced avocado, coriander, natural coconut yoghurt and nutritional yeast, and a side of AIP Grain-free Tortilla Chips.
