Feeding our bodies with nutritionally dense raw vegetables can provide better balance for our health on so many levels - hormonal, weight, blood sugar levels and immunity to name just a few. This salad is full of healthy fats and nutrients, it is bursting with flavour and has a lovely light crunch.
The key to making kale great in a salad is to massage the leaves, this makes it softer. This AIP Green goddess salad combines tones of savoury and sweet for the perfect taste.
AIP Green goddess salad
Time : 5 - 10 minutes
Servings : 1
Ingredients
• 1 cup kale, massaged and finely chopped
• 1/3 cup red cabbage, finely sliced
• 1 cup cucumber, cubed
• 2 tbsp fresh coriander
• 1 tbsp dried cranberries
• 1/2 avocado
• salt
• 1 tsp avocado oil
AIP Dressing :
• 1 tbsp avocado oil
• 1 tsp balsamic vinegar
• 1 tsp maple syrup
• 2 tbsp natural coconut yoghurt
Instructions
Wash and massage kale. Remove storks and finely chop.
Prepare all other vegetables. Toss salad together in a bowl.
Add dressing ingredients to a small bowl and stir to combine until creamy.
Serve salad in a bowl with avocado on side, drizzle dressing and scatter a tsp of shredded coconut on top.
