AIP Garlic & herb cassava crackers

These crunchy, rustic crackers are so easy to make and are very moreish. There are times when you just want to snack and these little homemade crackers hit that spot very easily! Delicious on their own or with a yummy AIP dip or topped with avocado.

AIP Garlic & herb cassava crackers


Cook Time : 12 minutes

Yields : 40+ crackers


Ingredients

• 1 cup cassava flour

• 1 tbsp garlic powder

• 2 tbsp dried thyme

• 2 tbsp dried oregano

• 1 tsp salt

• 2/3 cup boiling water

• 1/4 cup olive oil


Instructions

  1. Preheat the oven to 180 degrees.

  2. Combine all the dry ingredients in a bowl, mix through to combine.

  3. Pour in the hot water and olive oil. Stir through until it becomes a dough.

  4. Split the dough into two.

  5. Cut three sheets of baking paper the same size as your baking tray.

  6. Place the first ball of dough between two sheets of baking paper, and using a rolling pin, roll out until the dough is very thin.

  7. Remove the top paper and sprinkle over a little salt. Do one last roll, remove the top sheet and then transfer onto your baking tray.

  8. Using a pointed knife, lightly score the cracker lines. Set aside, and repeat with the second ball of dough.

  9. Place both trays of crackers into the oven and bake for 12 minutes, until lightly golden and crispy.

  10. Leave to cool and then break into crackers.


Storage


Keep in an airtight container for up to two weeks, or freeze.
