Kumara 'toast' with slaw

Kumara 'toast' is a great option for AIP sandwiches. It's surprisingly quick to make in your toaster, delicious and very filling. Top it with your favourite slaw recipe, dressing and protein.

Kumara is such a versatile vegetable. To make kumara toast it is best to use purple skinned kumara as they are more firm. Toasting time will vary depending on your toaster, it will be ready to eat once it is golden brown and the flesh is soft.


AIP Kumara 'toast' with slaw


Cook time : 15 minutes

Servings : 1 - 2 kumara toast


Ingredients

• 1 large round purple skin kumara

• 1/2 avocado

• 1/4 cup fresh coriander


Beetroot Slaw :

• 1/2 cup red cabbage, finely sliced

• 1/2 cup beetroot, grated

• 1 medium carrot, grated

• 1/4 red onion, finely sliced

• 1/4 cup fresh coriander

• 1 tsp salt


Dressing :

• 1/4 cup natural coconut yogurt

• 1 tbsp avocado oil

• 1/2 tsp turmeric powder

• 1/2 tsp garlic powder

• 1 tbsp lemon rind

• 1/2 tsp salt


Instructions

  1. Prepare all slaw ingredients and gently toss together in a bowl.

  2. In a small bowl or jar combine all dressing ingredients and mix through until creamy.

  3. Mix the dressing through the slaw and set aside.

  4. Slice the kumara long ways 1 - 1.5 cm thick. Place in the microwave on high for 2 minutes.

  5. Transfer to the toaster, and cook for 10+ minutes until the kumara is golden brown and crisy on the outside, and cooked through soft on the inside. Note, toasters vary so your cook time may be less or more, just keep cooking until it's perfect.

  6. Serve the kumara toast topped with beetroot slaw, avocado, fresh coriander, pinch of salt and a drizzle of avocado oil.
