Lamb kofta wraps

Lamb kofta in a flatbread wrap with slaw is seriously delicious! These are very popular in my family. Lamb is a great protein and when made with spices, fresh herbs and finely grated vegetables it makes for a very flavoursome, nutritious and filling meal.

With this recipe you will need to make your flatbread wraps first, recipe here. These are quick to make or you can make them the day before and reheat.


AIP Lamb kofta wraps


Prep time : 15 minutes

Cook time : 20 minutes

Servings : 2 people


Ingredients

Koftas :

• 300g lamb mince

• 1/2 small red onion, diced

• 2 cloves garlic, crushed

• 1 tsp fresh coriander, diced

• 1 tbsp fresh flat leaf parsley, diced

• 1/2 carrot, finely grated

• 1/4 courgette, finely grated

• 1/2 tsp salt


Slaw :

• 1 cup cos lettuce or mesclun

• 1/2 cup red cabbage, finely sliced

• 1/4 cup red onion, finely sliced

• fresh herbs, coriander, parsley.


Dressing:

• 2 tbsp cucumber, finely diced

• 1 tbsp coriander, diced

• 1/2 cup natural coconut yoghurt

• 1 tsp lime or lemon juice


Instructions

  1. Make Herb Flatbreads (see recipe), set aside.

  2. Prepare kofta ingredients, finely dicing onion and herbs. Squeeze water out of the courgette by placing it in a tea towel or thick cloth.

  3. Combine all kofta ingredients into a medium bowl and thoroughly mix through with your hands.

  4. Shape mixture into kofta shapes. Bake on a lined baking tray for 20 minutes, or heat a pan and gently cook with a little olive oil turning occasionally.

  5. In a small bowl or jar combine dressing ingredients and stir through. Set aside.

  6. In a medium bowl combine slaw ingredients and toss through.

  7. Warm flatbread, top with slaw, dessing, kofa and fresh herbs.
