A warm and hearty vegetable dish. This really hits those vegetable cravings! Garlic ginger coconut greens are paired with vegetable rice and sweet maple Ppumpkin, for a full flavour and nutritious meal.

AIP coconut vegetables & maple pumpkin

Serving : 2 people
Ingredients
Maple Pumpkin :
• 6 pumpkin crests
• 1 tbsp maple syrup
• olive oil
Coconut Vegetable Rice :
• 1 cup cauliflower rice
• 1 cup broccoli rice
• 2 tbsp coconut milk
• salt
Garlic Ginger Coconut Greens :
• 1 tbsp olive oil
• 1 leek, white part sliced
• 1 - 2 baby bok choy
• 2 cups silverbeet chopped
• 3 garlic cloves, crushed
• 1 tbsp ginger, finely grated or powder
• 2 tbsp coconut milk
• salt
• fresh coriander
Instructions
Brush the pumpkin with olive oil and maple syrup, and roast or BBQ until cooked.
Prepare the vegetables. Heat a large pan with oil and cook the leek with garlic and ginger until soft. Add the bok choy, silverbeet and coconut milk, and gently cook until the vegetables for 4 - 6 minutes or until they are softened.
In a large pan combine the cauliflower, broccoli and coconut milk, and cook over medium heat for 5 minutes or until full heated through.
Serve the pumpkin with coconut rice, garlic ginger vegetables, and garnish with fresh coriander.
