Quesadillas are simple and a delicious way to enjoy prawns! They're packed with flavor and made even more nutritious with my vegetable based dairy-free cheese sauce.


AIP Garlic prawn & broccoli quesadilla
Cook time : 10 min + sauce / flatbread time
Serves : 1 person
Ingredients
• 2 herb flatbreads, see recipe
• AIP dairy-free cheese sauce, see recipe
• 8 prawns, roughly chopped or whole
• 1 garlic clove, crushed
• 1 tbsp red onion, diced
• 1/4 cup broccoli florets, finely diced
• 1/4 cup baby spinach leaves, shredded
• 2 tbsp fresh coriander
• salt
Instructions
Make the AIP cheese sauce, see recipe
Make two herb flatbreads, see recipe
In a pan cook the prawns , broccoli and garlic.
To assemble lather the AIP cheese sauce over one flatbread, top with the prawn mixture, red onion, baby spinach and fresh coriander. Season well and place second flatbread on top. Heat through in the pan and then serve.
