Light, tangy and so delicious. Ginger garlic prawns wrapped up in little lettuce bundles with fresh lemon, coriander avocado is my perfect meal. And there is the added benefit of prawns being high in protein, low in calories and full of vitamins and minerals.

Crunchy, light and full of flavour this is such a quick tasty meal. Prawns can hold quite a lot of water so make sure you cook them quickly and evenly to ensure they don't dry out.
Key Ingredients
• prawns - king prawns with tails or detailed.
• lettuce - I use baby cos lettuce for its neutral flavour and good crunch.
• avocados - amazing source of potassium and healthy fats.
• coriander - rich in antioxidants and tastes amazing!

AIP ginger prawn lettuce tacos
Cook Time : 10 minutes
Servings : 2 servings
Ingredients
• 16 king prawns
• 2 garlic cloves
• 1 tbsp fresh grated ginger
• 1 tbsp olive oil
• 1 baby cos lettuce
• 1 avocado
• 1/2 cucumber
• 1/2 cup fresh coriander
• 1 tsp lemon rind
• 1/2 lemon, wedges
• Salt to taste
Instructions
Wash lettuce, slice avocado and cucumber. Set aside.
Heat nonstick pan with oil. Add crushed garlic, finely grated fresh ginger and lemon rind. Cook for 1 minute, then add prawns and cook for 3 - 4 minutes until cooked.
To assemble lettuce tacos, top each lettuce leaf with prawns, avocado, cucumber, coriander and a squeeze of lemon.
Eat immediately.
