AIP Lemon prawns & zucchini noodles

This deliciously fragrant meal is beautifully fresh and light. It's packed with the benefits of nutrient dense kale, broccoli, garlic, courgette, and the protein from prawns, whilst being low calorie. Super quick to make and full of flavour, it's possibly my favourite meal!

AIP Lemon prawns & Zucchini noodles


Time : 15 minutes

Serves : 2 people


Ingredients

• 3 - 4 large zucchini / courgettes, approx. 3 cups noodles

• 1 tbsp olive oil

• 1 tsp garlic powder

• 2 clove garlic, crushed

• 1/2 tsp salt

• 2 tbsp lemon juice

• 1 tbsp lemon rind

• 1 cup broccoli florets, finely diced

• 1 cup kale, finely diced

• 1/4 cup red onion, diced

• 16 - 20 large prawns, shelled

• 1 tbsp olive oil

• 1 clove garlic, crushed

• Lemon rind, slivers

• Nutritional yeast


Instructions

  1. To make the zucchini / courgette noodles, use a spiralizer or finely peel and then slice the zucchini's. Make approx 3 cups worth.

  2. Bring a large non-stick pan to medium heat with a little olive oil. Sauté the noodles, garlic, salt, lemon, broccoli, kale and red onion for 5 minutes.

  3. Bring a medium pan to heat. Add the prawns, garlic and a touch of olive oil, and cook quickly for 3 - 4 minutes or until the prawns are pink and hot.

  4. Serve the noodles immediately topped with prawns, slivers of lemon rind, fresh coriander, nutritional yeast and a pinch of salt.
