Make your lamb skillet delicious with these aromatic flavours! Very easy to make, this meal is well balanced and nutritionally dense, and takes less than 30 minutes to make.

AIP Moroccan cinnamon lamb skillet


Cook time : 25 minutes

Serving : 2 people


Ingredients

• 400g lamb mince

• 2 tsp ginger powder

• 2 tsp garlic powder

• 2 tsp cinnamon

• 2 tsp dried rosemary

• 1 tsp dried coriander

• 2 tbsp red onion

• 3 tbsp sultanas

• 1 cup carrot, grated

• 2 cups sweet potato, small cubes

• 3 cups silverbeet, shredded

• 1/2 cup fresh coriander


Instructions

  1. Wash and prepare the vegetables.

  2. Bring a large skillet to medium heat with olive oil, and brown the lamb mince, breaking it up as it cooks. Add onion, spices and dried herbs.

  3. Spread the sweet potato onto a large plate and microwave on high for 2 - 4 minutes so it is just soft, or if you'd prefer you can pre roast the sweet potato.

  4. Once the mince is browned add the grated carrot, sultanas and sweet potato, and slowly cook until the sweet potato is almost cooked through.

  5. Add the finely shredded silverbeet to the pan and toss through, and cook until just wilted and the sweet potato is fully cooked through.

  6. Serve with fresh coriander.
