AIP Crunchy granola

Breakfast on the AIP (Autoimmune Protocol) diet can be the most difficult meal to make, and there no store cereal options free from refined sugar, grain, gluten, nuts and seeds. My Orange Pumpkin and Apple Granola recipe is absolutely delicious! It's full of flavour and has the perfect crunch for a refreshing breakfast, not to mention it includes veges which you will never know are there. Serve with coconut milk and your favorite fresh fruit.

AIP Crunchy granola


Time : 45 minutes

Serving : 2 -3 cups / 4 small serves


Ingredients

• 1 large apple, baked apple rings

• 1 large carrot, baked carrot chips

• 1/2 cup coconut thread

• 2/3 cup coconut chips

• 1/3 cup dried apple

• 1/3 cup dried cranberries

• 1 tsp maple syrup

• 1.5 tsp cinnamon

• 1.5 tbsp orange rind

• 3 tbsp pumpkin puree

• 1/3 cup coconut oil, melted


Instructions

  1. Preheat the oven to 140° fan bake, and line three large baking trays.

  2. Remove the apple core, and finely slice to create thin apple rings. Scatter over one baking tray ensuring they do not over lap.

  3. Using a peeler or mandolin, finely slice the carrot, and scatter the second baking tray ensuring they carrot pieces do not over lap.

  4. Bake both trays for 20 - 30 minutes or until the chips are lightly crunchy. Remove from oven and leave to cool.

  5. Combine the rest of the ingredients into a bowl and mix through until evenly coated in the coconut oil and pumpkin puree.

  6. Spread mixture over a large lined tray and bake for 15 minutes or until lightly toasted.

  7. Once cooled gently toss through the carrot and apple chips.

  8. Serve with coconut milk and fresh fruit.

Storage


Keep the granola in a air tight container or jar for up to 2 weeks.
