Smoked salmon avocado salad

A smoked salmon salad with avocado and lime coconut AIP dressing is my go-to lunch or dinner. It has the protein and nutritional density that we need to feed our bodies to support healing. It can also be put together in 5 minutes and it's delicious!

When buying salmon, look for wild caught fresh salmon and naturally smoked salmon with no added sugars.


Smoked salmon avocado salad


Pre time : 5 minutes

Servings : 1 person


Ingredients

• 120g natural smoked salmon fillet

• 1 - 2 cups lettuce greens

• 1/2 avocado

• fresh herbs, coriander, parsley

• 3 - 4 sicilian green olives


AIP Dressing :

• 1 Tbsp avocado oil

• 1 Tbsp coconut yoghurt

• 1 tsp apple cider vinegar

• 1 tbsp parsley & coriander, finely chopped or dried

• 1/4 tsp salt


Instructions

  1. Wash and plate greens and olives. Top with smoked salmon.

  2. Combine dressing ingredients in a small bowl or jar and mix to combine.

  3. Drizzle over salad and fresh herbs.
