Vegetable fried cauliflower rice

Nourishing and quick-to-make, this meal is full of flavour and packed with lots of nutritious vegetables. Healthy and so simple, it is made with just a little coconut aminos and lots of fresh herbs.

AIP vegetable fried cauliflower rice


Time : 15 minutes

Servings : 1 - 2 people


Ingredients

• 1 tbsp olive oil

• 1 - 2 tsp turmeric

• 2 cloves garlic, crushed

• 1 cup cauliflower rice

• 1/2 cup button mushrooms, sliced

• 1 carrot, grated and sticks

• 2 asparagus, chopped

• 1/2 cup courgette, grated

• 2 tbsp coconut aminos or coconut teriyaki sauce

• 2 -3 tbsp water (if required)

• 1/2 cup broccoli florets

• 1/2 cup red cabbage, shredded

• 1/2 cup baby spinach, shredded

• 1 tbsp red onion

• 1/4 cup fresh coriander or flat leaf parsley

• salt to season


Instructions

  1. Prepare all vegetables.

  2. Heat olive oil in a large pan to medium heat. Add the garlic, turmeric, cauliflower rice and mushrooms. Cook for 3-4 minutes.

  3. Add the carrots, asparagus, broccoli, sauce and water. Stir through to combine and cook for 3 - 5 minutes or until vegetables are just starting to soften.

  4. Toss through the red cabbage, red onion and spinach.

  5. Serve with coriander and salt to season.
